Doesn’t All Cookware Work on Electric Stoves?

Wait a minute, doesn’t all cookware work on electric stoves? Yes and no.

If we’re talking about standard electric stoves, all cookware will work. But if we’re talking about induction stoves, which are technically electric, that’s a different story.

While standard electric stoves transfer heat from the hot coils to the cookware to the food via thermal conduction, induction cooktops create a magnetic current that heats the cookware directly.

Because of that, only pots and pans with a magnetic steel base (like steel or cast iron) will work on induction cooktops. Pans with an aluminum or copper bottom aren’t magnetic; therefore, they’re incompatible with induction.

Besides understanding that caveat for induction stove owners, there are several other important factors to consider.

You want to choose pans with a smooth bottom. Bare cast iron works, but it’s not ideal for glass cooktops. The rough bottom and burrs can scratch the glass if you’re not careful. If you have a glass cooktop, opt for enameled cast iron. The enamel coating is smooth and won’t damage the glass.

You also want to look for cookware with a flat bottom that will keep it in contact with the electric surface for even heating.
