What to Look for in an Oven-Safe Skillet

Almost all skillets are oven-safe, but some perform better than others.

These are the top factors to consider when shopping for an oven-safe skillet.

High Oven-Safe Temperature

Oven-safe temperatures of 500°F or higher give you more freedom over what you can cook, especially if you prefer high-heat techniques like roasting or broiling. Anything lower limits your options.

Almost all stainless steel, carbon steel, cast iron, and copper cookware is oven-safe up to 500°F, and some can handle up to 800°F. Non-stick pans max out at 500°F — exceeding that temperature can cause the coating to release harmful fumes.

Some non-stick pans, like GreenLife, have plastic or silicone-wrapped handles. In those cases, the oven-safe temperatures are even lower. Skillets with steel handles usually have the highest heat tolerance.

Oven-Friendly Handle Design

The handle design is one of the most important factors to consider when choosing an oven-safe skillet.

  • Low-angled handles easily fit between oven racks. On the top rack, a high-angled handle might prevent your food from getting close enough to the broiler. A low-angled handle also means you can easily remove the skillet from the oven, reducing the risk of spills, splatters, and burns.
  • Select a skillet with metal handles. Options made of wood, silicone, or plastic will lower the oven-safe temperature of the cookware.
  • Look for a skillet with ergonomic handles that provide a comfortable grip and are easier to maneuver. Rounded handles are never a good choice for oven use because they are less stable in your hands when you are wearing oven mitts or gloves.
  • Pick riveted or welded handles because they offer a secure attachment. Options with screws can often come loose. With large skillets (12 inches or more), choose options with a helper handle because it makes moving the skillet safer, especially when it’s hot.

Thick Construction

Cookware with thick walls or multiple bonded layers, like fully-clad stainless steel, holds up better over time and is built to withstand high heat. It also heats more evenly and retains heat better. As you shop for an oven-safe skillet, look for options with walls 3 mm thick or more.

Wide Cooking Surface

Another key consideration is the diameter of the cooking surface. Look for a skillet with a large cooking surface, so you don’t overcrowd the pan. If the pan is overcrowded, the food will steam instead of brown.

For example, a 12-inch skillet usually has a cooking surface between 9 and 10 inches wide. Ten inches is plenty of room for searing and roasting three chicken breasts or two New York strip steaks without crowding the pan. An 8-inch skillet is large enough for one chicken breast, and a 10-inch skillet can handle two.

The most notable upgrade is the handle design. D3 handles have All-Clad’s classic cup shape design, which people often complain about because the sharp edges can dig into your hand.

Best Budget Oven-Safe Skillet: Lodge

Lodge is a popular and highly affordable American-made brand. While the brand makes cast iron cookware of all shapes and sizes, it is best known for its cast iron skillets.

Lodge is a proven brand. It’s been around since 1896, and all cookware is still made in South Pittsburg, Tennessee, the place of its founding. It’s thick, sturdy cookware that can hold up to the high heat of an oven.

I contacted Lodge, and they confirmed that the pre-seasoned cast iron cookware begins to lose its seasoning when heated beyond 500°F. You’ll need to reseason it if you cook at higher temperatures.

Why You Should Buy Lodge

Lodge is the best oven-safe skillet if you’re on a budget. It costs less than lunch in a major city, but you’ll enjoy it for a lifetime.

You can use it in your oven at any temperature, and it’s grill- and broiler-safe. It comes pre-seasoned; you can use it right out of the box.

Large Lodge skillets have helper handles to make it easy to maneuver the cookware. And the flat handles make it possible to fit on any oven rack — you only need about three inches between oven racks.

And while it takes a bit longer to get hot due to cast iron’s thickness, it maintains heat exceptionally well once it gets hot.

To demonstrate its heat retention, I recently tested Lodge and Calphalon cast iron skillets and recorded the results. I found that the Lodge skillet distributed heat more evenly than the Calphalon skillet and stayed hotter longer.

After boiling water in both skillets and removing them from the heat, the water in the Lodge skillet measured 131°F after five minutes, while the Calphalon water measured 125°F. After ten minutes, the water in the Lodge skillet measured 116°F. The Calphalon water measured 109°F.

If you haven’t heard of Stargazer, that’s because it’s a relatively new brand, launching in 2015. I’ve been testing it for several months and am highly impressed.

These skillets are made in the United States by skilled craftsmen. They come in two sizes: 10.5- and 12-inch.

The handles are significantly longer than most cast iron skillets. Stargazer handles are 7.6 inches long, and Lodge skillet handles are about 6 inches.

That extra inch and a half makes it easier to maneuver the skillet while keeping your hand away from the piping-hot base.

The helper handle on Stargazer skillets is also much larger and easier to grip than the ones on most cast iron skillets.

Stargazer skillets are lighter than most cast iron skillets. For example, the 12-inch skillet weighs 6.5 pounds, while the Lodge 12-inch skillet weighs 7.9 pounds. Many other 12-inch cast iron skillets weigh over eight pounds. With Stargazer, you still get a hefty skillet that retains heat well, but it’s a tad lighter and easier to handle.

Looking closely at the cooking surface, you’ll notice that Stargazer skillets are smoother than most. During manufacturing, the surface is ground smooth by skilled craftsmen, and a two-step treatment is applied to make the iron rough enough to hold onto the seasoning. With a smoother surface, food is less likely to stick.

Overall, Stargazer is an excellent oven-safe skillet, and a high-end alternative to Lodge cast iron. The main downside is that it’s more expensive than Lodge. However, the benefits that come with that cost (longer handle, lighter construction, smoother surface) are worth the investment, especially when you consider that cast iron skillets can last forever.
